- Tipologia del terreno: Argilloso – sabbioso con presenza di ciottoli
- Sistema di allevamento: Cordone speronato
- Densità dell’impianto: 3500 piante / ha
- Anno d’impianto del vigneto: 1968
- Resa uve per ceppo: 1,3 kg con il diradamento
- Epoca di vendemmia: fine settembre, manuale
- Vinificazione: Macerazione sulle bucce a 28° -30 ° C e conseguente fermentazione malolattica
- Temperatura di fermentazione: In vasche in acciaio e cemento vetrificate
- Fermentazione malolattica: Si
- Affinamento: In botti austriache da 3000 litri, per sei mesi di affinamento (botti esauste, in uso mediamente 20 anni).
- Produzione media anno: 25.000 bottiglie circa
- Abbinamenti gastronomici consigliati: Le vigne del Petrignone piantate nel 1968 in terreni sabbiosi-argillosi della sottozona Oriolo rendono questo vino il più salino e balsamico dei nostri rossi, e per questo si abbina a tutte le carni rosse semplicemente cotte alla brace ma anche a paste all’uovo con condimenti a base di carne (…tagliatelle alla bolognese). E’ un vino da invecchiamento
